Asti's Chocolate Soufflés

Ingredients:

  • 6 ounces dark sweet chocolate, cut into pieces
  • 1/2 cup plus 1 teaspoon sugar
  • 1/3 cup milk
  • 4 egg yolks
  • 6 egg whites
  • 1/4 cup sugar
  • Powdered sugar for garnish

Preparation:

Preheat oven to 350 degrees. Butter six 1/2 cup soufflé dishes and sprinkle with sugar, shaking out the excess. Combine chocolate, 1/2 cup plus 1 teaspoon sugar, and milk in medium saucepan. Set over low heat and cook, stirring frequently, until chocolate is melted. Transfer chocolate to mixing bowl and let cool slightly. Beat egg yolks into the chocolate. Beat egg whites in medium bowl until firm. Add remaining sugar and continue beating until whites are stiff and glossy. Stir half of egg whites into chocolate mixture, then carefully fold in remaining whites, blending thoroughly. Gently spoon mixture into prepared dishes. Bake for 20 minutes. Sprinkle tops with powdered sugar and enjoy! Serves 6.
